As far as performance goes, the GeForce RTX 3070 Ti should theoretically be much better than the Radeon RX 5600 XT overall. (explain)

GeForce RTX 3070 Ti 622899 MB/sec
Radeon RX 5600 XT 344064 MB/sec
Difference: 278835 (81%)

Texel Rate

The GeForce RTX 3070 Ti is much (approximately 53%) faster with regards to AF than the Radeon RX 5600 XT. (explain)

GeForce RTX 3070 Ti 302400 Mtexels/sec
Radeon RX 5600 XT 198000 Mtexels/sec
Difference: 104400 (53%)

Pixel Rate

If using lots of anti-aliasing is important to you, then the GeForce RTX 3070 Ti is the winner, by a large margin. (explain)

GeForce RTX 3070 Ti 151200 Mpixels/sec
Radeon RX 5600 XT 88000 Mpixels/sec
Difference: 63200 (72%)

Please note that the above 'benchmarks' are all just theoretical - the results were calculated based on the card's specifications, and real-world performance may (and probably will) vary at least a bit.

Memory Bandwidth: Bandwidth is the largest amount of data (counted in MB per second) that can be moved over the external memory interface in a second. It's worked out by multiplying the card's interface width by its memory speed. If the card has DDR type RAM, it must be multiplied by 2 once again. If DDR5, multiply by ANOTHER 2x. The better the card's memory bandwidth, the faster the card will be in general. It especially helps with AA, High Dynamic Range and higher screen resolutions.

Texel Rate: Texel rate is the maximum number of texture map elements (texels) that can be applied in one second. This is calculated by multiplying the total number of texture units of the card by the core clock speed of the chip. The higher this number, the better the card will be at texture filtering (anisotropic filtering - AF). It is measured in millions of texels applied per second.

Pixel Rate: Pixel rate is the maximum amount of pixels the video card can possibly record to its local memory in a second - measured in millions of pixels per second. The figure is worked out by multiplying the number of Render Output Units by the clock speed of the card. ROPs (Raster Operations Pipelines - also sometimes called Render Output Units) are responsible for outputting the pixels (image) to the screen. The actual pixel fill rate is also dependant on lots of other factors, most notably the memory bandwidth of the card - the lower the memory bandwidth is, the lower the ability to reach the max fill rate.
